Preheat oven to 200°C. Bring beef or lamb to room temperature and roast for 20-25 mins per 500g for medium or 25-30 mins for well done. Cover and let stand for 10 mins before carving across the grain
Heat a little oil in a frying pan. When hot, add beef or lamb and cook quickly, turning once until well browned. Rest for 5 minutes before serving.
Brush beef or lamb steaks with oil and season with salt and pepper. Preheat BBQ to a high heat and brown meat on each side, 2-4 mins for rare, 4-6 mins for medium. Rest for 5 minutes before serving.
Pat beef or lamb dry. Heat a little oil in a frying pan and brown. Add seasonal vegetables and seasoning. Serve with rice or pasta
Coat cubed beef or lamb in a little flour. Brown in a frying pan and transfer to a casserole dish. Repeat with your selection of seasonal vegetables. Add beef stock and cook at 160 degrees for 1.5 - 2 hours. Serve on rice or mashed potatoes.
